Baked Flapple Jacks

Dorothy has been on a mission to complete her Brownie baking badge.  And I have been on a mission to work out how on Earth she’s going to do that in our kitchen, with a broken oven, that heats the kitchen better than the food inside it!

Thank goodness for the air fryer!

This is one of the recipes that she used for her badge and it was so delicious that I thought I’d share it with you.

You Will Needfor 2 people

2 apples

2 teaspoons butter

1 cup porridge oats

1 tablespoon golden syrup

1/2 teaspoon ground mixed spice

Method

We used an air-fryer but this dish could be made using an oven too.

  • Without peeling the apples, cut them in half and carefully remove the core
  • Spread a little of the butter on the cut sides of the apples
  • Place the apples skin side down in the air fryer and bake at 180 for 10 minutes
  • Melt the remaining butter
  • Combine the melted butter, syrup, mixed spice and porridge oats
  • Spoon the porridge oats on top of the apples and bake in the air fryer for a further 5 minutes
  • Serve immediately

When Dorothy made these for our breakfast, the house was filled with the most delicious smells of apples and flap jacks.  We sat at the kitchen table trying to decide what to call them and ate them on their own but they would be lovely with some yoghurt or even ice cream if you’re looking for a real treat.

Fingers and toes crossed that she passes and achieves her Brownie badge.  I think she deserves it!

Love Rachel ❤️
