A few years ago I read an article that turned me off toffee/caramel apples completely. It said that once the stick has been pushed into the apple, the fruit is susceptible to bacteria and basically starts to rot inside the toffee.
Gutted.
My one time favourite Bonfire Night treat was now resigned to memory. However realising I’d never eat another toffee apple, inspired me to create this yummy cocktail.
You will need
Dark spiced rum
Cloudy apple juice
Sparkling apple juice
Toffee syrup (the kind you use in coffee)
Ice
Lustre powder – optional
Caramel sauce – optional
Method
I consider 2fl.oz to be 1 shot
- Prepare your glass by applying a small amount of caramel sauce around the rim.
- In a cocktail shaker, combine ice, 1 shot dark rum, 3 shots apple juice and 1/2 shot toffee syrup (Beth prefers it with a full shot of syrup so just make it to your taste)
- Shake well
- Add a pinch of lustre powder
- Shake again
- Strain into a the glass and add another pinch of lustre powder. This should sit on the frothy surface
- Serve quickly
This delicious grown up drink will take you right back to the good ol’ days when ignorance was bliss and we didn’t know the truth about toffee apples 😂
