Pumpkin spice makes everything better in my opinion, so why not try pumpkin spiced cupcakes!?
If you enjoy gingerbread men, you’ll likely be a fan of these cakes. The frosting adds the perfect finishing touch and is surprisingly easy to do.
You will need
2-3 teaspoons pumpkin spice (recipe here)
3 eggs
150g of golden caster sugar
180g plain flour
175g margerine
2 table spoons of semi skimmed milk
3 table spoons of golden syrup
2 tea spoons of baking powder
Frosting
Icing sugar
Green food colouring gel
Orange butter cream – use ready made or get recipe here and simply add orange food colouring
Method
- Preheat the oven to 160 and prepare a 12 cup tray with cake cases
- Blend together the margerine, sugar and golden syrup
- Add the pumpkin spice and eggs and combine well
- Add the flour and baking powder at the same time and fold in to the mixture
- Divide between the cases and bake for around 15 minutes or until firm and golden
Allow to cool completely before decorating
Decorating
- Using a piping bag and a wedge shaped nozzle begin by piping two C shapes of buttercream at the outer edges of the cake
- Add another two just overlapping the outer Cs
- Continue to add C shapes until you reach the middle
- To make the green icing, take a couple of table spoons of icing sugar and add a little food colouring gel
- Add water to the icing sugar,.a teeny tiny bit at a time until you have a thick glace icing
- Spoon the icing into a piping bag with a very narrow nozzle
- Pipe stalks, leaves and tendrils on to your pumpkins
